Prepping for 100 day Proper Home Cooking challenge – Using Wholewheat Flour

So officially I begin our 100 days of Proper home Cooking on the UK average budget on Sunday. Why Sunday? Cos that is when we do our weekly shopping each and every week so I want to start my plans and prep from the same time each week.

Today as I got ready though in mind and thought, I decided to try cooking and more so baking with Wholewheat flour. My goal is to replace all our white flour recipes with Wholewheat alternatives as they are better for your body.

First recipe to get the make over treatment was my “easy as a Wholewheat pie” (maybe to follow) Lemon Fairy Cakes.

Here is the very easy recipe:
125g of Wholewheat flour
Same of sugar
Same of butter/margarine
2 eggs
2 lemons
Icing sugar

Cream together the sugar and butter. Add the 2 eggs. Mix in the flour. Then add juice of 1 lemon.

Pop into a preheated oven at 180oC for 15-17 mins or until slightly browned but cooked through (use a fork or knife to check through middle).
When cool, mix icing sugar and 1/2 of juiced lemon to form simple icing to spread on top.

And the results – well they taste just like cakes, lemon ones. More of a deeper taste than with normal white flour, but I like it and it is a nice texture still so no change dramatically to the outcome. I think I might stick with it.

It certainly Set me up to try out making homemade Wholewheat pizza dough and even see if Wholewheat flour works for most cakes too.
