100 days of Proper Home Cooking – the recipes edition

Really enjoying the change of mentality lately over eating better foods. I love to bake – nothing nicer and more satisfying that seeing those you love also enjoy something you created from scratch. And so this week I made some time (little dude was napping) to try out some better recipes for tasty treats.

The result – very good and just as good as normal cake bakes. I will share recipes over time but here is the one from this week that I thought was particularly good…..

Now I going to use some unconventional measurement guides but it is because sometimes I can’t be bothered to weigh in order to get the job done.

Whole wheat Chocolate Brownies

3/4 tea mug of whole wheat flour
1 mug of melted butter (roughly 6oz)
3/4 mug of brown sugar
1 tspn of vanilla extract
2 eggs
1/2 cup of milk
1/2 cup cocoa
1 small bag of choc chips (any type you like)
1/4 tspn of salt
1/2 tspn of baking power

Preheat oven to 180oC.

Put all dry ingredients into a large bowl. Make a well in the middle

Melt your butter and add slowly in the eggs (so you don’t get scrambled eggs) and vanilla.

Add all the liquids slowly to dry mixing as you go till you get a cake batter.

Put into a good 1 inch deep tray and cool for 25-30 mins until soft to the touch but cooked.

The taste result – the whole wheat flour gives that nut like taste but without nuts. Very very nice…. 8/10
